Position: Assistant Unit Manager

Location: Los Angeles, CA or Las Vegas, NV

Summary

Support the Unit Manager in overseeing multiple Michelin-starred and award-winning Japanese fine dining restaurants in Los Angeles or Las Vegas. Ensure smooth daily operations, consistent service quality, strong team leadership, and accurate reporting in coordination with managers, chefs, HR, and partner owners in Japan.

Key Responsibilities

Operations

  • Support daily operations across multiple locations; act as deputy when the Unit Manager is absent
  • Provide hands-on floor support (service execution, guest relations, opening/closing, incident response)
  • Lead managers’ meetings and drive operational improvements
  • Handle guest escalations as a secondary point of contact

People & Training

  • Assist with recruiting, onboarding, and training with HR
  • Support performance evaluations and labor data review
  • Supervise shared staff (Receptionists, Janitorial team) and oversee reservation/reception operations

Compliance & Reporting

  • Support OSHA/health & safety compliance and facility maintenance/cleanliness
  • Assist with labor/food/beverage cost tracking and budget support
  • Prepare weekly reports (sales and reservations) and coordinate updates with partner teams in Japan

Qualifications

  • 3+ years management experience in fine dining or luxury hospitality (10+ staff); 5+ years industry experience preferred
  • POS and restaurant operations experience required
  • Business-level English required; Japanese language/cultural familiarity preferred
  • Strong leadership, prioritization, and communication skills

Certifications

  • CA ANAB Food Handler (required); CA RBS and ServSafe Manager (preferred); Sommelier (preferred)
